The type of durum wheat and the characteristics of the semolina define the quality of pasta, affecting the typical deep yellow color and its stability.
If pasta is of poor quality it tends to lose starch, which dissolves in water. The result is sticky pasta, without "character", and water which, after cooking, is cloudy and white.
In contrast, in high quality pasta like the Pasta produced by this family, gluten prevents the starch from absorbing water, protecting taste and texture.
